Step aside, pumpkin —  there’s a veggie that wants to take the top spot and become synonymous with fall. We’ve all tried sweet potato fries, but have you ever heard of sweet potato casserole? This recipe represents everything fall has to offer: comfort, sweetness, warmth, and a little bit of crunch! We found a great deal on sweet potatoes using Flipp and also stocked up on discounted butter because this season is all about dessert.

For 9 servings, you will need:

Topping:

  • 1 cup crushed corn flakes
  • ¼ cup chopped pecans
  • 2 tbsp packed brown sugar
  • 2 tbsp butter
  • 1.5 cups mini marshmallows 

Directions:

  1. Preheat oven to 400 degrees F. Pierce each sweet potato several times with a fork and transfer to a baking sheet. Bake for about 1 hour, or until very tender when pierced with a fork.
  2. Meanwhile melt ¼  cup butter in a medium saucepan over medium heat and allow to brown, swirling pan occasionally.
  3. Remove potatoes from the oven and reduce oven temperature to 350. Cut each in half and scoop out flesh into a large mixing bowl. Mash potatoes with a potato masher or fork.
  4. Add the ¼ cup of browned butter, granulated sugar, light-brown sugar, and salt. Then, using an electric hand mixer set on low speed, blend together until well combined. 
  5. Add the eggs and milk, mixing until blended well. Pour mixture into a buttered 9 x 9 baking dish and spread into an even layer.
  6. Brown another 2 tbsp butter in a saucepan. Pour crushed cornflakes into a mixing bowl, along with chopped pecans and 2 tbsp brown sugar and mix to combine. Pour browned butter over mixture and toss to evenly coat. 
  7. Spread mixture into rows over mashed sweet potato mixture leaving about a 1-inch gap between rows. Bake in preheated oven (350 degrees F) for 25 minutes.
  8. Remove from oven and rest 5 minutes, then spread marshmallows between rows of corn flake topping. Return to oven and bake until marshmallows are melty and lightly golden if desired about 5 – 10 minutes. Serve warm.
