Coconut Curry Lentil Soup

This Coconut Curry Lentil Soup by The Modern Proper is packed with protein, thanks to the lentils. It is hearty and rich, featuring sweet potatoes and coconut milk. You can use vegetable broth to make this a vegan meal that’s dairy-free and delicious. 

Ingredients:

  • 1 ½ cups dried brown lentils
  • 2 (13.5 oz) cans coconut milk
  • 6 cups vegetable (or chicken) broth 
  • 2 cups sweet potato (peeled and cubed)
  • 4 cups torn kale
  • 2 tbsp olive oil
  • 1 large onion (chopped)
  • 4 garlic cloves (minced)
  • 1 tsp salt
  • 1 tbsp ginger (grated)
  • 3 tbsp yellow curry powder
  • ½ tsp cinnamon

Directions:

  1. Heat olive oil and saute onions until translucent.
  2. Add all the other ingredients (except kale) and bring to a boil before reducing to a simmer.
  3. Allow soup to simmer for 20 minutes.
  4. Add kale and simmer uncovered for another 5-10 minutes. 

Flipp Tip: If you have some bread that’s about to expire lying around, don’t throw it out! Pair it with your soup and dip it right in or, turn it into croutons as a crunchy topping.

Vegetable Pasta Soup

When it comes to using pantry essentials, this recipe by Foodal really prioritizes that! From canned ingredients to frozen vegetables and pasta, this recipe uses them all. 

Ingredients:

  • 2 (28-oz) cans diced tomatoes
  • ½ cup frozen corn 
  • 1 cup frozen green beans 
  • ¾ cup frozen carrots 
  • ½ cup canned black beans (rinsed and drained)
  • 1 cup peeled and diced Russet potato 
  • 5 cups chicken (or vegetable) broth 
  • 1 tsp dried basil
  • ¾ cup pasta 
  • Salt and pepper to taste

Directions:

  1. Add the chicken or vegetable broth along with all the ingredients (except pasta) to a big pot, and bring to a boil. Boil for about 15-20 minutes until the potatoes are tender.
  2. Add pasta and cook until al dente for about 7 minutes and season with salt and pepper. 

African Peanut Soup

Ingredients:

  • 2 tbsp olive oil
  • 1 medium onion (chopped)
  • 1 tbsp ginger (minced)
  • 1 jalapeno (seeds removed and diced)
  • 4 garlic cloves (minced)
  • ½ tsp pepper
  • 2 tsp cumin
  • 2 tbsp tomato paste
  • 1 (14 oz) can crushed tomatoes
  • 4 cups chicken stock (or vegetable broth)
  • 1 (14 oz) can chickpeas
  • 1 cup peanut butter
  • 4 cups kale (chopped) 
  • 1.5 lbs shredded chicken
  • Peanuts and cilantro for garnishing 

Directions: 

  1. Heat olive oil over medium heat and cook onions until softened.
  2. Add ginger, jalapeno, garlic, pepper, cumin, and tomato paste until the tomato paste darkens. 
  3. Add crushed tomatoes, stock, chickpeas, and peanut butter. Bring to a boil and stir. Simmer on low for 15 minutes until sweet potatoes are tender.
  4. Add kale and chicken and cook for another 5 minutes. Adjust salt to your liking.
  5. Serve with garnishes and enjoy!

Tomato Soup 

A classic loved by all, and a hit for a reason! This recipe by Simply Whisked uses canned crushed tomatoes and simple ingredients. Plus, this soup uses coconut milk instead of whipping cream and cheese without compromising its smooth, velvety texture and comforting flavor. It even saves you some money from those rising dairy prices. 

Ingredients:

  •  2 tbsp olive oil
  • 1 onion
  • 1 tbsp minced garlic
  • Pinch of salt
  • 3 (28 oz) cans crushed tomatoes
  • 4 cups vegetable broth
  • 2 (15 oz) cans coconut milk
  • ½ tbsp dried basil
  • ½ tbsp dried parsley
  • ½ tsp dried oregano
  • 1 bay leaf

Directions: 

  1. Heat olive oil, onion, and garlic with a pinch of salt on medium high until translucent.
  2. Add the rest of the ingredients, cover and simmer for about 20 minutes.
  3. Remove bay leaf and blend with an immersion blender until smooth.
